German investigators have isolated cyclic alpha-keto enamines from dark malt. The compounds have neither a minty odour nor taste. This new class of natural compounds will find application in ice cream, chocolate products, soft drinks and even drinking water. A panel of experts estimated the cooling effect of the new material 35 times more powerful than that of peppermint.
